Kale!

I don’t think l have ever (knowingly) eaten kale before until recently.

With all the talk on other blogs about the benefits of kale, and the many recipes that seemed amazing to eat (the kale chips! everyone is raving about the kale chips!) that included it I finally buckled down and bought a bag of it when I went to Wal-Mart. I know, I know. Wal-Mart is the devil. But hey, in my defense I did go to a Neighborhood Market, and their tomatoes for some reason are always so good, and last for so long I couldn’t resist stopping by for some cheaper produce.

I haven’t really been able to find kale in any smaller bag than a huge 2lb bag. I figured it was worth the cost (around $4), and even if I didn’t eat the entire bag, which living alone was certainty, I could say I tried it.

Oh. My. God.

Kale has now moved to my second place spot on my top vegetables list, asparagus leading the list, and spinach in a close third. The first thing I made with it was a shrimp polenta dish I found at the blog KathEats (link to the recipe: http://www.katheats.com/favorite-foods/confetti-shrimp-grits/) the recipe didn’t call for it, but I decided that it would be a good substitution, thus began my love affair with this leafy green.

Since then I’ve put it in eggs, had it on sandwiches, sauteed it into pastas, ate them straight out of the bag, made chips out of them (sprinkle a little bit of olive oil and spice of your choice, lay them out on a sheet, and stick them into the oven at about 375 for 15 until brown, healthy thin chips, yum!). Tonight they are going in my box of mac and cheese (no worries, it’s the Whole Foods kind and I like to bulk up the boxed foods with tons of fresh produce and spices) and I CAN’T wait. My bag is almost gone after barely two weeks.

If you like spinach, you’ll definitely like kale as an alternative. Especially when it’s sauteed. I find that raw kale has a little bit more of a bitter taste than raw spinach, so I wouldn’t necessarily like it was a replacement leaf in my salad as I would spinach, but it’s definitely in the family.

How do you cook/eat your kale? I now need to know more recipes to aid in my obsession!
